It’s been a week since the kids have been
testing my patience at home for the holidays and we have already had two bumps on the little guy’s head, one bruise on the big brothers forehead and one little miss grumpy sunshine with an existential crisis. You know how they say that you only miss something when it’s gone? Well, school I miss you.
No, seriously now, I love Christmas. Its all about traditions. And awkward family moments. We all have that last bit in common, don’t we? Last but not least, Christmas is all about FOOD. Lots and lots and lots of food. So for someone like me, who loves to take seconds of the main culinary highs of the wonderful Christmas dishes, there is not much room left for the rich and complex desserts (unless it is Anna’s chocolate cake, there is always room for that).
That’s when this dessert comes in. It is easy, simple, light (ish) and only needs 3 ingredients and 5 minutes of your time to put together.
lemon yogurt cream
1 can of sweetened condensed milk
2-3 organic lemons, zest & juice
1 kg Greek yogurt, 10 % fat
- Mix thoroughly all of the above ingredients in a large bowl
- Let it sit in the fridge for a minimum of couple of hours or preferably overnight
- I like this dessert to be on the tart side so I usually use 3 medium sized lemons. You can adjust the tartness by using less lemons, try to find the balance of your preference by slowly adding the juice of the lemons.
- Always use organic lemons when adding lemon zest.
